Instructions
- Boil the Pasta:
- Bring a large pot of salted water to a rolling boil. Drop in the pasta and stir well. Cook according to package instructions until al dente which usually takes 9 to 11 minutes. Before draining scoop out about half a cup of pasta water to help your sauce later
- Sauté the Aromatics:
- While the pasta cooks heat olive oil in a large skillet over medium heat. Add the finely chopped onion and gently cook for 2 to 3 minutes until it softens but does not brown. Stir in the minced garlic and crushed red pepper flakes. Sauté just until fragrant about 1 minute
- Build the Tomato Base:
- Pour the canned crushed tomatoes into the skillet. Season generously with salt and pepper. Let the mixture simmer uncovered for about 5 minutes so the flavors meld and the sauce thickens slightly. Stir occasionally to avoid sticking
- Add the Vodka:
- Pour in the vodka and let it bubble for 2 to 3 minutes. This stage lets the sharp notes of alcohol cook off leaving behind smoothness and depth
- Cream and Cheese Finish:
- Turn the heat to low. Pour in the heavy cream and let the sauce gently simmer for 2 minutes. Scatter in the freshly grated Parmesan cheese. Stir until the cheese melts and the sauce is creamy and glossy
- Combine Pasta and Sauce:
- Add the drained pasta directly to the skillet with the sauce. Toss everything together over low heat so the pasta is well coated. If the sauce looks too thick drizzle in some reserved pasta water until silky and luscious
- Serve and Garnish:
