- Meat Sauce: 500 g ground pork (or ground chicken or beef), 2 tbsp vegetable oil, 1 medium onion (finely chopped), 3 cloves garlic (minced), 2 tbsp ginger (grated), 2 tbsp gochujang (Korean chili paste), 1 tsp crushed red pepper flakes (adjust to taste), 1 can (400 g) crushed tomatoes, 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp sugar, salt and pepper to taste
- Cheese Layer: 250 g ricotta cheese, 1 large egg, 100 g mozzarella cheese (shredded), 50 g parmesan cheese (grated), 2 green onions (thinly sliced, for garnish, optional)

Instructions
- Prepare the oven:
- Preheat oven to 180°C (350°F).
- Cook noodles:
- Boil ramen noodles for 2 minutes less than package instructions. Drain and set aside.
- Make meat sauce:
- Heat oil in large skillet over medium. Add onion, garlic, ginger; sauté until fragrant and translucent, about 3 minutes.
- Add pork:
- Stir in ground pork and cook until browned, breaking up with spoon.
- Spice and simmer:
- Add gochujang, red pepper flakes, crushed tomatoes, soy sauce, rice vinegar, sugar. Season. Simmer 10 minutes until thickened.
- Mix cheese layer:
- In bowl, combine ricotta, egg, half mozzarella, half parmesan until blended.
- Begin assembly:
- In 22x30 cm baking dish, spread thin meat sauce layer on bottom.
- Layer noodles:
- Add layer of ramen noodles (about 1 pack per layer).
- Layer cheese and sauce:
- Spread third of ricotta mixture on noodles, top with third meat sauce. Repeat layers twice, end with remaining meat sauce.
- Add cheese topping:
- Sprinkle remaining mozzarella and parmesan over top.
- Bake:
- Cover dish with foil, bake 20 minutes. Remove foil, bake 10–15 minutes until cheese is bubbling and lightly golden.
- Rest and garnish:
- Let stand 10 minutes before slicing. Garnish with green onions (optional).
