  • 1/4 tsp freshly ground black pepper

Instructions

1. Combine Salad Ingredients
In a large mixing bowl, combine the chickpeas, cucumber, cherry tomatoes, red onion, parsley, and mint (if using).
2. Prepare Lemon Vinaigrette
