# Expert Advice:

01 -
  • The texture contrast between creamy smashed avocado and chunky eggs is genuinely satisfying
  • It comes together in under 25 minutes but tastes like something from a proper brunch spot
  • You can customize the herbs and spices based on what you actually have in your kitchen
02 -
  • The cold water shock after boiling makes peeling eggs so much easier
  • Mashing the avocado before adding eggs keeps some texture instead of turning into puree
  • Lemon juice is not optional if you want it to taste fresh and not gray
03 -
  • Use slightly underripe avocados if you want more texture and less mush
  • Mix in everything except eggs first, then fold eggs in last so they do not disappear
  • Toast bread in the oven at 400°F for 5 minutes if you are making multiple servings
