A luxurious appetizer featuring creamy truffle-infused mushroom macaroni atop crisp crostini, perfect for elegant gatherings.

I first made these Truffled Mushroom Mac Crostini for a family holiday dinner and everyone loved the decadent flavors with the crispy bread. I was amazed by how quickly they disappeared from the appetizer tray.

Ingredients

  • Crostini: 1 baguette sliced into 12 thin rounds, 2 tbsp olive oil, 1 garlic clove halved
  • Mushroom Mac: 120 g (4 oz) elbow macaroni, 1 tbsp unsalted butter, 1 tbsp olive oil, 200 g (7 oz) mixed mushrooms (cremini, shiitake, or button) finely chopped, 2 garlic cloves minced, 1 tsp fresh thyme leaves (or ½ tsp dried), ½ tsp kosher salt, ¼ tsp black pepper, 80 ml (1/3 cup) heavy cream, 50 g (1/2 cup) grated Gruyère cheese, 2 tbsp grated Parmesan cheese, 1 tsp truffle oil (plus more for drizzling)
  • Garnish: Fresh chives finely chopped, Extra Parmesan cheese (optional)

Instructions

Make Crostini:
Preheat oven to 200°C (400°F). Arrange baguette slices on a baking sheet, brush both sides lightly with olive oil, and bake 8–10 minutes, flipping once, until golden and crisp. While still warm, rub with cut sides of garlic clove. Set aside.
Cook Macaroni:
Cook macaroni in salted boiling water according to package instructions. Drain and set aside.
Prepare Mushrooms:
In a large skillet over medium-high heat, melt butter with olive oil. Add chopped mushrooms and cook, stirring until they release their moisture and begin to brown, about 5–7 minutes.
Add Seasonings:
Add minced garlic, thyme, salt, and pepper. Cook for 1 more minute until fragrant.
Make Sauce:
Lower heat to medium. Stir in cooked macaroni, heavy cream, Gruyère, and Parmesan. Mix until cheese is melted and the mixture is creamy, 2–3 minutes.
Add Truffle Oil:
Remove from heat. Stir in truffle oil. Taste and adjust seasoning if needed.
Assemble Crostini:
Spoon a generous tablespoon of the mushroom mac mixture onto each crostini. Garnish with chives, extra Parmesan, and a light drizzle of truffle oil if desired.

Recipe Guide

Can I use different mushrooms for this dish?

Yes, feel free to use any mix of cremini, shiitake, or button mushrooms to vary the flavor and texture.

Is it possible to make this lighter?

You can substitute light cream or use less cheese to reduce richness, though the flavor will be less decadent.

How do I keep crostini crisp for serving?

Let baked crostini cool completely before topping, and serve immediately to prevent sogginess.

Can it be prepared ahead of time?

You can prepare the mushroom macaroni and crostini separately in advance, then assemble just before serving.

Is there a vegan option?

Yes, substitute plant-based butter, cream, and cheeses for a vegan-friendly version full of flavor.

What wine pairs well with this?

This appetizer goes especially well with a crisp Chardonnay or sparkling wine to balance the richness.
