01 - Line an 8x8-inch baking pan with parchment paper, ensuring all edges are covered.
02 - In a large mixing bowl, combine rolled oats, almond butter, honey, melted butter, vanilla extract, and salt. Stir thoroughly until the mixture is incorporated. Press this evenly into the prepared pan and refrigerate while preparing the gummies.
03 - Pour fruit juice into a small saucepan. Sprinkle over unflavored gelatin and let it hydrate for 5 minutes. Place the saucepan over low heat, stirring constantly until gelatin fully dissolves. Mix in honey or agave syrup, then pour the liquid into a parchment-lined small baking dish. Transfer to the refrigerator and chill for 45 to 60 minutes until set.
04 - Once the gelatin has set, turn out onto a cutting board and cut into small cubes.
05 - Remove the oat base from the refrigerator. Evenly distribute the gummy cubes, freeze-dried fruit, and freeze-dried candy across the surface. Press toppings gently into the oat layer.
06 - Return the pan to the refrigerator and chill for an additional 10 to 15 minutes to fully set the toppings.
07 - Lift the snack slab out of the pan using the parchment paper. Slice cleanly into bars.
