01 - 1 large green cabbage, trimmed

02 - 3 tablespoons olive oil
03 - 3 cloves garlic, minced
04 - 1 teaspoon smoked paprika
05 - 1/2 teaspoon sea salt
06 - 1/2 teaspoon freshly ground black pepper
→ Finishing
07 - 1 lemon, zested and juiced
08 - 2 tablespoons fresh parsley, chopped (optional)
# Method:
01 - Preheat the oven to 425°F. Line a baking sheet with parchment paper and set aside.
02 - Remove any tough outer leaves and slice the cabbage through the core into 1-inch-thick steaks, yielding about 4–5 steaks; reserve any small end pieces for another use.
03 - Place the cabbage steaks in a single layer on the prepared baking sheet with a little space between each piece.
04 - In a small bowl, combine the olive oil, minced garlic, smoked paprika, sea salt, and black pepper; whisk until evenly blended.
05 - Brush the oil mixture generously over both sides of each cabbage steak so they are well coated.
06 - Roast on the middle rack for 15 minutes, turn each steak carefully, then roast an additional 12–15 minutes until the surfaces are golden and the edges are crisp.
07 - Transfer steaks to a serving platter, drizzle with lemon juice, sprinkle lemon zest and chopped parsley if desired, and serve immediately.
