# Expert Advice:

01 -
  • It comes together in barely 20 minutes but tastes like something from a fancy brunch spot
  • The combination of textures, crispy bread, creamy egg, and herby pesto, is ridiculously satisfying
  • You can keep the components on hand for a last minute impressive meal
02 -
  • The 7 minute simmer time is non negotiable for jammy yolks, one minute less and they are too runny, one minute more and they lose that magical texture
  • Have your ice bath ready before you start boiling the eggs, because every second counts when it comes to stopping the cooking process
  • Room temperature pesto spreads more easily and does not cool down the toast as quickly
03 -
  • Use the freshest eggs you can find, because they peel more cleanly and have better flavor
  • If your pesto is thick, thin it slightly with a teaspoon of olive oil for easier spreading
  • Grate your own Parmesan instead of using pre grated for a melt in your mouth texture
