# Method:
01 - In a large mixing bowl, mix the rolled oats, peanut butter, honey, vanilla extract, and sea salt with a spatula until fully incorporated.
02 - Fold in mini chocolate chips, ground flaxseed, and shredded coconut, blending until evenly distributed.
03 - Using a tablespoon measure, scoop portions of the mixture and roll each into balls with your hands.
04 - Place each oat bite on a parchment-lined baking sheet or plate. Chill in the refrigerator for at least 30 minutes to set.
05 - Store oat bites in an airtight container in the refrigerator for up to one week, or freeze for up to two months.
