- In a large pot or Dutch oven, heat a tablespoon of oil over medium heat. Add ground beef and cook, breaking it apart with a spoon, until browned for 5 to 7 minutes. Drain excess fat if necessary.
- Add diced onion, celery, bell pepper, garlic, and jalapeño to the pot. Cook, stirring often, until vegetables are softened, approximately 5 minutes.
- Stir in tomato juice, Bloody Mary mix, diced tomatoes including their juice, Worcestershire sauce, and hot sauce. Blend thoroughly.
- Incorporate kidney beans, black beans, celery salt, smoked paprika, cumin, black pepper, coriander, and cayenne pepper. Mix to combine.
- Bring mixture to a gentle simmer. Reduce heat to low, cover the pot partially, and cook for 45 minutes. Stir occasionally as the flavors develop and chili thickens.
- Taste and season with additional salt, pepper, or hot sauce according to preference.
- Serve hot, garnished with chopped parsley or celery leaves, lemon wedges, and a dollop of sour cream as preferred.
